Most days my breakfast consists of something very light and simple, I don't wake with an appetite and it takes a couple of hours for me to be ready to sit down to a substantial meal. Often it's a smoothie, green juice or a handful of berries and nuts for breaky. But on those days when I do want more of a meal, oats are my go-to.
Now, I can't take credit for the bowl of awesomeness shown above, this is from The Elevation Hotel and Spa in Crested Butte, Colorado where my son and I stay when we ski. This was some of the best oatmeal I've ever had, and that's saying a lot because I have high standards for my oats. I've recreated this dish several times since returning from our latest ski trip, it's super simple and delicious.
To your cooked hot oats add a little organic brown sugar (I used organic coconut palm sugar instead) and stir it together. Then portion your oats into bowls and add some dried figs, chopped walnuts and a halved banana. If you want to go all-out you can first caramelize your bananas in a little coconut oil and brown sugar/coconut palm sugar in a hot pan until the sugar melts. Divine.
