I'm not much of a breakfast person. Most days I don't have any appetite until lunch is right around the corner. Fresh green juice is my go-to "breakfast" upon waking, and while it's highly nutritive and does give me a nice instant energy burst, it doesn't stay with me long. I've developed a number of nutritious, light, high-protein, mid-morning snacks to fill the void until lunch time. This is my current fave. It's a snap to throw together, it's loaded with quality protein, healthy omega 3 fats, fiber, vitamins and minerals, and most importantly, it's delicious!
Avo & Egg Toast
1 slice Udi's Gluten Free Whole Grain bread, toasted
1 hard boiled pastured egg, peeled and chopped
2 teaspoons organic shelled raw hemp seeds (I like Nutiva)
2 teaspoons chia seeds (Trader Joe's has them at a great price)
1/8 avocado, peeled and sliced
Combine the egg with the hemp and chia seeds, reserving a few seeds for sprinkling on top of the completed dish if desired. Spread the egg salad on the toast and top with the slices of avocado. Sprinkle with hemp and chia seeds.
