Put the lime in the coconut smoothie

I'm enjoying a lazy Saturday morning before tackling my household chores. It's actually cool enough to sit outside this morning and enjoy the birds and the sunshine before we heat up into the 90's again. I love to sit and watch my three fur-babies run and play in the yard. Their endless curiosity always amazes and inspires me. They come into this same yard every hour, every day. But each time they rush around like it's all new. There's definitely a lesson there!

So with that inspiration in mind, I'm trying something totally new with my smoothie today. I'm using three ingredients I haven't worked with in smoothies before- fresh coconut meat, sunflower sprouts, and vanilla paste. The flavors here are fresh, bright and zingy. I hope you'll be inspired to give it a try!

Put the lime in the coconut smoothie

This recipe will make approximately 32 ounces. Into your high speed blender:

1 young Thai coconut, water and meat

1 whole lime, peeled

2 large handfuls baby spinach

1 small handful fresh mint leave

1/4 cup dried mulberries

1/4 cup fresh pineapple

1 teaspoon blue green algae

1 tablespoon maca powder

2 teaspoons camu camu powder

1 teaspoon vanilla paste

4 coconut water ice cubes

stevia drops to taste, optional

bee pollen for garnish (omit for 100% vegan smoothie)
