Oatmeal Pineapple Smoothie (gluten free & vegan)
1/3 cup dry gluten free oats (not cooked!)
8 ounces unsweetened coconut milk
4 dates, pitted
1/2 cup plain non-dairy yogurt (I used So Delicious Coconut Milk yogurt)
1 frozen banana
1/3 cup hemp hearts (aka hemp seeds)
1/2 cup fresh pineapple, chopped
1/2 cup fresh mango, chopped
Garnish: chopped mango and hemp hearts
- Place the oats in the blender and process until powdery.
- Add the coconut milk and the dates. Blend until well combined. This could take several minutes depending on the power of your blender.
- Add remaining smoothie ingredients and blend until smooth.
- Top smoothie with mango and hemp.
